Finally got around to making ramen properly! Had a rack of pork ribs, a nice pork shoulder, and some time. Took three days starting with the chashu salt/sugar cure. Didn’t make the noodles though, maybe another time. Made four lucky bowls for the first round. Next day used the leftover toppings with a chicken broth I had in the freezer… how amazing it is to have a tare and aromatic oil on hand now!
