Oh hey there. Well that was a long quiet period. I’m still here, still been cooking on occasion, but less so. It’s been a bit of a roller-coaster last few months. And it’s still technically a pandemic, though many believe otherwise. Hence this 4th wave. Anyway, here’s a place of *gasp* Costco food + grits from a while ago.

Shrimp & Grits by special request! Went to a grocery store I’d never been to for the grits and was surprised by their inventory. Definitely will be back. Also piled on collard (kale) greens to round it out.

See, I DO make a salads! Rainbow chard with apples, feta, toasted pumpkin seeds, beets, and lemon vinaigrette. Carries over for great rando-fusion bowls… adding some acid and textural contrast to the fried rice and lentils? ¯\_(ツ)_/¯

First attempt at air fryer donuts. A little rough to look at, a bit dense, but a good start with plenty room for improvement!

I admit, I may have a problem with carrots and meat. I promise, I’ll make sometime vegetarian next.
But I realized I’ve never actually made a beef roast. So it couldn’t be helped.
